#GutsyEats – Strawberry Avocado Toast

I decided to throw in the occasional recipe post to my blog. I want to call this series #GutsyEats. The first recipe that I will be sharing is my favorite variation of Avocado Toast.

The Glorious Avocado
Avocado is a great source of healthy fats and has over 20 different sources of vitamins and minerals. They are more abundant in potassium than banana, with 14% of your daily recommended amount of potassium. Avocado is a great source of fiber. One avocado contains about 27% of your daily recommended amount of fiber, with 25% being soluble fiber and 75% being insoluble fiber.

Strawberry Avocado Toast

  • 2 Slices of Bread
  • Lemon
  • Pink Himalayan Salt (or Table Salt)
  • 1 Avocado
  • 6 Strawberries, Halved

How to
  1. Toast your bread.
  2. While your bread is toasting, cut open your avocado.
  3. Mash up one half of the Avocado and squirt half of a lemon into the mixture.
    • Depending on how much avocado you want on your toast you may use half or the whole avocado.
  4. Once the bread is done toasting place the mashed avocado mixture on each toast.
  5. Place a dash of salt on each slice of toast and then top with strawberries.
This recipe is one of my go-to avocado toast recipes because there is a great combination of sweet and salty.
Tip: Mash the avocado in its casing to avoid using a bowl (one less dish to clean).
That’s all for today. Let me know what your favorite Avocado Toast recipes are. If you decide to recreate this recipe tag me on Instagram @gutsyfeeling and use the hashtag #GutsyEats.
Lots of love,
Your Trusty Gutsy Gal
